Good news: the rules are simple, and nobody expects you to live on plain rice.
The white diet means eating only pale, non-staining foods for 48 hours after teeth whitening. Freshly whitened enamel is temporarily porous, so pigments absorb more easily. Chicken, rice, pasta, white fish, banana and plain yoghurt are safe. Coffee, red wine, curry and beetroot are not.
Think of it as a short window where your teeth act like a sponge. Two days later they settle, and normal eating resumes.
Why Do the First 48 Hours Matter?
Whitening gel opens the microscopic channels in your enamel to lift the stain out. Those channels stay slightly open afterwards while saliva does its repair work.

Anything strongly coloured going in during that window travels straight back down the path the stain just left. A curry on the first night can undo a fair chunk of what you paid for.

Two extras worth knowing. Smoking stains freshly whitened teeth faster than any food on that list, so skip it entirely for the 48 hours if you can. And highly acidic drinks such as lemon water are best left for a couple of days too, since the enamel is still settling.
When Can I Drink Coffee Again?
Forty-eight hours. That is the honest answer, and it is the question we get asked most.
After that, coffee is fine. Two habits protect your result long term: drink it reasonably quickly rather than sipping across a whole morning, and rinse with water afterwards. A flat white does far less damage than a long black, because the milk dilutes the pigment.
Same logic for tea. Black tea stains more than coffee for most people, so a peppermint or chamomile in the first two days is the safer swap.
Eating Out During the White Diet
Two days of pale food sounds harder than it is, and dinner plans do not need cancelling.
Grilled chicken or fish with rice or chips works almost anywhere. Plain pasta with olive oil and parmesan works at any Italian restaurant. A ham and cheese toastie, a chicken salad without dressing, or fish and chips all pass without a second thought.
Book your whitening on a Thursday if you have a big weekend coming up. By Saturday night you are back to normal and looking your best.
How Do I Keep My Results Longer?
The white diet protects the first two days. Long-term maintenance is a different job.
Use the take-home touch-up trays from your kit every few months. Rinse with water after coffee, wine or anything strongly coloured. Keep up your regular check-up and clean at the interval your dentist sets, because surface stain gets removed at those visits before it has a chance to settle in.
Most patients hold a good result for one to three years with those three habits.
